Coming from the most confidential and small appellation of Bordeaux, with only 1 glass of wine produced per vine, Csons is a rare and precious goldsmith's wine. On a magnificent terroir of limestone and marine fossils bordering Sauternes, botrytised berries are mostly harvested at the “rotten roasted” stage in order to find an aromatic balance and freshness characteristic of the appellation. The magic happens.

Description

Smallest appellation in the Gironde, Cerons is a French white wine with a protected designation of origin produced around Cerons in the Graves vineyard, one of the subdivisions of the Bordeaux vineyard. Its production area borders on that of Sauternes. The Cérez appellation area is located in the municipalities of Cerons, Illats and Podensac. The plots are located on the left bank of the Garonne, in the Gironde department, about thirty kilometers south-east of Bordeaux. The Cerons appellation area forms an enclave in that of Graves. This vineyard includes around 30 hectares in production. Cerons wine can only be made from Sémillon, Muscadelle and Sauvignon grape varieties. The grapes must be overripe and harvested by successive sorting. The must must contain at least 212 grams of sugar per liter, and the wines must have at least 12.5% alcohol by volume. The wines are fine and elegant, but they do not reach the concentration of Sauternes: they are lighter and more nervous. They can be kept for 5 to 15 years. More information on Ceron wines.
